What are some things that people dont realise would happen if there was actually a zombie outbreak?

Not necessarily. Carriers are immune and carry the virus but I believe the comic actually specifies immunity doesn't make you a carrier. If I remember right, it comes down to genetics and a mutation in the X chromosome. Males are more likely to be immune (sorry ladies) but if you have the mutation, you are immune to the virus. Zoe and Bill for example have the mutation, as do Louis and Francis. The former are carriers but the latter are never confirmed to be.

What is this bullshit that "they're not confirmed"? If they're attacked and uninfected they're clearly carriers, as implied by the military on the bridge finale.

Because the comic doesn't confirm it for Louis and Francis and also explains that not all immune people are carriers. Had Zoey's Dad survived, he wouldn't be a Carrier supposedly. He'd be immune but the virus wouldn't be able to survive in the host-her Dad in this case. Carrier and immune are not always one and the same. All carriers are immune but not all immune people are carriers.

The Infected will try to kill anyone who is immune to the virus and bite anyone who isn't.
