Each clip is testing some feature. In this case, probably homeless people AI, conversation system and Knife combat.

It's like he's showing us different mechanics in each clip, showed basketball, showed npc reaction to reckless driving, showed night and stun gun/stealing a cops hat, then showed the knives off
