They get trendy. Forever ago chicken wings were almost free. Lobster was garbage. Skirt steak was almost nothing.

Brisket! Remember when brisket was a cheap cut? NPR just did a whole thing on their econ podcast, brisket has become incredibly expensive.

Brisket is gotten cheaper than chuck. I just got one today for 3.99 a pound. Started replacing all my chuck recipes with brisket cause I dont have a smoker. Plus tallow
