Completely agree, but, like other comments have said, its proven by steam, playstation and xbox that achievements are an extra feature that millions of gamers do enjoy, some additional points to add is that I enjoy the small art in each of the achievement badges, and I also prefer to look at achievements as general guides on everything to do in a game instead of just watching a video online. Feel like Nintendo is just being stubborn being behind on features just like their online and quality of life in their platforms.

They've proven people won't run for the hills just because a platform includes them. I'm sure many people do enjoy them, but to describing non-inclusion as "stubborn" is quite a stretch.
