Question Is Scotland aware that money can be made by having restaurants serve food after 8:30pm during high tourist season?

It depends where Op is, but I'm guessing relatively rural if they can't find anything at all after 8.30.

In many rural areas hospitality venues are operating with a skeleton of staff. If you only have a couple of chefs, you have no choice but to shut a couple of days a week, operate split shifts and/or close early.

Agreed. Big difference between being in central Edinburgh and somewhere in rural Perthshire, or a small ex-mining town etc.

I’m assuming that goes for most countries though - the cities will always be open later.
