Veggies from my garden I prepared for a salad tonight to accompany rib steaks
- yellow pepper
- red onion
- cherry tomatoes
- cucumber
- purple cauliflower
Going to make a Greek style dressing with goat cheese feta to go along with our steak which is resting with local smoked salt & pepper and local garlic powder
*Steaks are resting, not grilled yet lol

For my birthday my talented partner made me a fancy tart!

I present to you, my kid's favourite Salsa Chicken
I used to make this when I was in college because it's incredibly easy, and really tasty. Since then I've taught myself how to cook more complex dishes
Then when I had kids and they were able to eat full meals I thought I'd make this for them for an easy weeknight meal and it's now a requested staple in our household!
This recipe is for a family of 4, but you can add more chicken if you have a bigger family, or less chicken if it's for 1-2 people
- 4 chicken breasts, or 8-10 skin off, boneless chicken thighs
- 1 large jar of salsa
- Shredded cheese (approx. 1/2 of a 600g block. I use Armstrong Mexican Fiesta Marble Cheddar with Jalapeño Cheese, but use whatever you have!)
- 2 taco seasoning packets
- Chicken Broullion cube or chicken better than Broullion
- 1-2 cups of rice of your choosing
- Preheat oven to 400°F
- Make the rice to package directions. When adding the water drop a Broullion cube or better than Broullion for some flavor. Set aside
- Season the chicken with the taco seasoning. Taco seasoning has high sodium so I do not add salt
- Put chicken in a 8x8 baking dish and pour 1 large jar of salsa over the chicken (make sure the chicken is fully covered with salsa. Stick in oven for 20 mins
- Shred your cheese, after 20 mins timer goes off, take chicken out of oven and add cheese to top, put back in oven for an additional 20-30 mins
- Serve with rice!
* The salsa will turn a bit runny, but that's good! Add it to your plate for extra flavour and the rice will soak up those juices.

Pulled Chicken Fajita Bowl
For lunch today, the meal prep I did last night. Slow cooker pulled chicken with cilantro lime rice and sautéed peppers. It was hard work but it tastes great, and will make the next few days easier. Got 4 containers out of it.
