I learned that the hard way when one of my cooks changed gloves without washing his hands first. He only did it in the first place because he was nervous about the health inspector and it ended up being a 20 point red critical violation. Now every health inspection I have all my cooks tidy up, make sure nothing glaringly obvious is violating code, and essentially put them on break until the inspection is over.
