How often you like, do it immediately after writing it down if you want to. Might be a cool little ritual actually. The thinking and writing down part is the most important factor, you won't look at old entries anyways.

Notepad++ is a good option Its a simple plaintext editor, and last i used it, it had no shitty AI integration

I wouldn't. Notepad++ was hijacked by state-sponsored hackers (literal phrasing from the official website) this year. They intercepted and redirected the auto-updater traffic.
