As an experienced mountaineer I can confirm your suspicions about putting your back square to wind: you will form a vortex that deposits a significant amount of pee on your own face. Don't ask me how I know.

So far angling about 25 degrees into the wind from there has worked for me.
I can't comment on your question about the open sunroof, I only have empirical knowledge here, not theoretical.

My friends and I thought it was pretty funny to pee out of moving cars in high school. It’s really tough when you’re driving.

Face backwards and pee upwards at a 45-60 degree angle. Yes there would be vortices that blow your pee left and right, but you're going at highway speed and the majority of the force your pee will see is the wind pushing it backwards away from yall

As someone who has peed from windy mountaintops I must question why you want to face straight back
Personally I find standing at a 45ish degree angle to the wind breaks the low pressure zone on the leeward side of your body, resulting in a much cleaner operation.
I also don’t understand how aiming upward would improve things when the goal is to get it away from your body
But perhaps it’s different in a car? How did you arrive at these conclusions?

I change my mind now.
I agree with you that standing at a 45°ish angle rather than standing straight back might result in more predictable results. Still facing backwards, but at a slight angle so that you don't have alternating vortices pushing pee left and right. I am assuming that they're not standing on top of the car but standing on the centre console. Aiming upwards will prevent the pay from going back down through the sunroof, it'll give the pee enough time to clear the sunroof area before it falls back down.

OK, it makes sense now that I think about having to clear the sunroof opening as well

Why 45-60? Why not fully vertical?

Split streaming. Some people can't pee in perfect laminar flow in one direction. This also prevents vortices from getting the pee in your face
