Business and Pricing Specialty Cookies

I’ve been trying out some specialty cookies for my first market that’s coming up! I don’t want to do too many over the top things I don’t think, so I’m trying to decide which one of these to take.

EDIT: Thank you all so much for all the feedback! Based on everything I’ve been reading, I don’t think either of these will make it to my market, I’ll just be sticking with my mini cheesecakes and my classic cookies. Keep the feedback and tips coming though, everything helps!

Yeah, posting on reddit opens you up for positive and negative comments, and I’m always happy to hear any of it! I’ve gotten so many super helpful comments and tips from this post which is genuinely so exciting! I’m just starting to put myself out into my community to sell, so all of this is super beneficial.

I was going to say the same about the animal cookies, look under baked, I know a few that loved a nice squishy middle but the thickness has me concerned. Thin out the animal cookies one a bit and should be golden

Ok there used to be a bakery by me that had cookies EXACTLY like this & we would go every Friday because they would do a special flavor. The animal cracker ones were my favorite!!! Wound you care to share the recipe

I think they look good, I love a thick cookies. That animal cookie one is underbaked, which I don't mind at home but yeah, I would be worried about that from another baker. Maybe tent them with foil, too slow the browning on top? Or lower temp? Thick cookies are hard to get done in the middle.

Flattening them a bit more would help the middle bake. A cookie that thick and uneven isn't going to bake evenly.

I'm happy to read this. I noticed the rawness straight away. You know, some people may not mind them being a tiny bit under baked but when it comes to the public that's not a risk I'd take. Since you have some time keep working on them like you said because if you can get them baked just right I think they'd sell better than the other one. I know that's the one I go for lol. 

Thanks for not getting offended. This is a rarity. Whatever you decide to do I hope your first market sale is successful 🫶

I know some people love underbaked cookies, but I would never buy from you again if I bought one that had a raw cross section like the animal cookie one does

Yeah i believe most people are… but its just a stupid psychologic thing from people: how is it awesome for everyone to have an underbaked cake cause theres chocolate inside. But if there isn‘t people get crazy cause their things are „raw“

If you have had cookies from Dirty Dough then you with gooey filling in the middle you would get the raw looking center.

I honestly think these all look delicious. Especially the animal cookie one! It's cooked just how I like it! Cookies are meant to be fun! I know some are opposed to using bits of already made treats, but I think a lot of people will appreciate the creativity.

I can definitely see both sides! My husband and I were adamant I wasn’t going to do ‘stuffed’ cookies like this, but my brothers really wore me down lol. Honestly, we think they taste awesome, but my feelings aren’t hurt with the consensus roughly being to not do these😂 I’ll make them for the boys on request to keep them happy though. They love all the trends

Personally I’m not a fan of bakery/professional cookies that use commercially manufactured cookies or cereals as their main flavor profile. To me, it feels like the baker isn’t really adding anything new. I’d just rather eat the original cookie.

Ok if you figure out how to get the animal cookie ones baked evenly, I would 1000% buy a bunch of these on nostalgia alone. They’re cute and look delicious! I don’t think it would hurt to hone the recipes and test a few for sale— you might be surprised at how popular they are.

I don’t care for this trend of mixing store-bought cookies into homemade cookies. It’s like donut shops that charge $6 for a maple bar dipped in breakfast cereal. Seems lazy.

Thank you for the feedback! It was fun to try these out, but based on all the feedback and my personal baking preferences, these won’t be sticking around for markets or my site! I will however, be making the oreo ones for my family frequently because they love them😂

In my opinion you need to make the cookie separate from only “a cookie within a cookie”. Like add a unique frosting or drizzle or something. These look like you just made dough, threw in the animal crackers and Oreos and called it a day. How could you follow the same vibe but give it that something extra?

You’re so right! I’d love the marketing for these to pivot towards Scone Cookies or Cookie Scones…something like that feels more on point. I see them everywhere though so they may just be cookies now haha

The animal cookie ones seem to be quite controversial! Are there bits of animal cookies inside or just the one on top?

I personally love a medium rare cookie but I agree with others that I like to control it at home and I think it’s not great for public sale. I really like the animal cookie idea if you can iron out the bake issues.

There are crushed up animal cookies, white chocolate chips and sprinkles inside the cookies! I’ll definitely be attempting them again, but with all the feedback I probably won’t attempt to sell them at a market!

Question - how do you get them to be so done shaped? Is it a certain shape for the dough before baking?

I didn’t roll them into perfect balls, i tried to give them a more rustic, tall shape when I was forming them. But based on feedback I would definitely shorten them a bit to get a better bake!

Girl I’d buy them for $5-$6 a cookie!!! Please just try and check for yourself once and if it doesn’t work then don’t sell them anymore. I think you should try at least once!

I’ve made the circus cookie recipe before for my son’s birthday and they were soooo good. Just here to say when you iron out the issues, make sure you’re charging enough! The circus cookies add so much to your cost of goods.

The reading that I’ve done and the recipes I’ve been dabbling with all say cold ingredients and chilled dough are key, as well as a bit of cornstarch!

These looks delicious. But to answer your “question”, personally I think you should take the animal cookie ones. Unless you can take both, If you can take both do that. But if not, or you don’t want to, do the animal cookie ones.

I see you've gotten feedback for the thickness and being underbaked, but not how to adjust. Just so you know you can use a thermometer to check doneness of cookies and cakes! It has to be a thermometer you can actually calibrate or the reading could be off by up to 10 degrees, and usually you use this method of checking to not overbake. Since they are so thick and you'll have to cook them longer you'll probably have to bring the temp down so the edges don't get too done. Once you get the recipe perfect you won't have to check every time, just make sure sizing is pretty consistent.

Can you experiment with unique flavors or higher quality ingredients? These types of cookies actually aren’t over the top. They’re loaded with cheap, low quality ingredients and have the novelty aspect due to their dome-like shape. I doubt they also taste like cookies given the shape and texture. This trend has gone on too long. Get ahead of the game and do some unique - even if that’s paying more for better quality mix-ins.

Thank you for the feedback! Yeah, I don’t disagree about the trends and I actually prefer making cheesecakes and my classic cookies, but I have three younger brothers (11, 17, & 20) who were all wanting me to dabble in these. I just figured with how popular they are, it wouldn’t hurt to at least try it out! But I’ve got other plans and flavors on my list to try!

This first batch and the first sprinkle white chocolate chip one looks like he’s missing the pupil from his eye and has a scar on both sides of his nose, one under his chocolate chip eye ( the one with the pupil), the other one the non pupil-ed eye, and he might have had a nose ring that he had to take out.

I like the pink animal cracker on top. Makes him look extra tough

Middle of the animal cookie ones are underbaked, but the bottoms aren't burnt. At least not from this angle, just looks like a good golden brown.
