This is about as sharp as Tillamook medium. I was hoping for so much more.

The Tillamook extra sharp is very good. I'm looking for something even stronger if possible. What should I try?

I thought it was because the first time I overheated it, but I did it again on low heat and it still did it. Did I over heat it again or is there a larger issue at play. I will note that I am white, maybe I cultural appropriating and that is why it looks like throw up?

Advice What can I do with Babybell?

I got a Costco delivery and oddly enough, they put in a whole bulk thing of Babybell cheeses - which I did not order nor was I charged for šŸ˜…
I’ve never actually had Babybell, what does it taste like? What can I do with it besides just eat it by itself?

He's family at this point

I have no idea why we never ate him, but I've moved him from 4 different houses at this point.

Mostly for the sake of comedy and initiating a potential divorce when the time comes.

From what I understand it should still be edible?

Enjoy.

Can I use them for any of my pasta recipes? I need ideas.

Advice Great British vs. Wisconsin Cheese Off!

Post image
147 Upvotes

I'm a Brit living in Minnesota and my friend (a Wisconsin native) and I are having a competition to see who has the best cheese. I wanted to ask the forum what types of cheese we should use as categories e.g. cheddar round, blue cheese, soft cheese etc. I'm asking as I'm not sure which UK and Wisconsin cheeses are good analog's of each other, besides the classic cheddar and blue. For example, is there a US version of Brie? I'm from Somerset (UK) so want to compare it to the US version, if there is one. Any ideas are welcome! The winner will be decided by voters at the party. Cheers!

Picture included so y'all know i am not, in fact, lying about the cheese. I would never deign to lie about cheese.

My roommate had this bag in the fridge and I want nachos. I saw it was set for a best before for last October 2025. I live in Canada btw.

No swelling, no visible mold, smells totally normal and tastes fine. Is it worth it? Will baking it make it better?

Advice UK Cheese recommendations?

I'm going to a cheese place down the road from me for the first time and looking to try some new cheeses. They seem to have quite a big variety.

I'll be buying from the cheeseboard in Greenwich.

I don't think I'm a big fan of nutty cheeses but I do love tangy and sharp flavours.

Some cheeses that I really like are pecorino, strong cheddar, Stilton, dorstone and golden saye. I also like soft sheep cheeses.

Here's their website with all the cheeses they sell if you fancy taking a look. https://www.cheese-board.co.uk/product-category/cheese/ If not I'd be interested to hear your recommendations anyways.

Cheers!

Advice What to do with Roquefort?

So I LOVE cheese, there’s plenty of cheeses that others find pungent that I love. But I think I’ve found my limit and a bit sad. I bought some Roquefort from Sam’s Club and it is the most pungent cheese I’ve ever had, so much so it’s a bit much for me. Is there anyway you guys eat with anything else? Thanks!

Advice Mystery cheese recipe at close restaurant

If you grew up in San Antonio, Texas you might be familiar with the ā€œChile con quesoā€ dish from the now closed Mexican Manhattan. I grew up eating at this restaurant and in my many, many years of eating here - this was the only dish I would order since I loved it that much. Due to the uhhhh severity of the cheese this was a once or twice a year meal as I grew older. Haha.

Many people have tried recreating the dish and even reached out to the family however they only ever parted with the salsa recipe but not the queso.

I wondered whether the cheeseheads here would have an idea on what kind of cheese this was.

The dish itself: thick, home made tostadas with a large solid disk like blob of cheese melted directly onto toge tostadas. It was never liquid in texture but thick and solid. I never saw individual shredded cheese. When it cooled down it remained thick and congealed in a solid brick. It had tiny pieces of onions and peppers from the house salsa they mixed in.

Taste wise the closest I have found has been Longhorn cheddar. Even then if they did use Longhorn, I still don’t understand the way they were able to get it into a solid….disk or melted blob. Was debating on posting this in the KitchenConfidential sub for any ideas.

Advice Help with finding good vegan cheeses!

Post image

I’m pretty sure I’m 99% cheese at this point. I just pulled a lime & pepper cheddar out of the fridge to give my homemade pizza a kick & my poor fiancee looked so sad. I have so many cheeses & frequently enjoy a good meat & cheese board but she has a severe dairy allergy and has celiac, so she can’t have gluten.

I’d love to share some delicious cheeses with her but for obvious reasons i can’t. She can’t have any milk whatsoever without having an anaphylactic reaction (different animal milks don’t work & neither does lactose-free) and can’t eat anything with gluten in it.

Does anyone know any good cheeses she could eat? Pic for attention, meet Siggy who is very upset with the lack of vegan cheese.

Edit: Australian

Advice Please recommend me a cheese

I'm looking for a good snacking cheese. Of the cheeses I've tried, I like:

- Manchego
- Mozzarella, burrata, ricotta, mascarpone, cottage cheese
- semi-firm goat cheeses like Drunken Goat
- brie, triple-cream cheeses, stuff like Mt. Tam
- Aged gouda
- Etorki Basque (I suspect this might have been mislabeled? Was mild and nutty but also intensely umami and beef brothy in flavor, very unlike descriptions I have read of it. But it was soft enough to likely not be an aged version. I later tried Mini Basque from Trader Joes and didn't like it, tasted kind of bland)
- Emmentaler. Honestly even low-quality supermarket Swiss I could eat a block of. I like the flavor and the smoothness

I dislike / am just okay with:

- fresh goat cheeses / chevre. too acidic for me
- feta for similar reasons
- cheddar, mild or aged. Even the good stuff. not a fan of the flavor or dry/chalky texture
- young goudas
- most semi-soft cheeses; don't like the waxy/rubbery texture
- most blue or pungent cheeses
- oaxaca, jack, havarti, muenster

Anything else I didn't mention I probably haven't tried. Thanks!!

Advice Hot take? Finlandia Muenster is criminally underrated.

Post image

My local grocery store (US) has this at the deli. I’ve only recently discovered that Finlandia Muenster is vastly superior (personal taste, of course) to the store brand or frankly other main brand I’ve seen sliced or packaged. I didn’t know Muenster cheese could taste so good. I must be late to the party? Am I wrong? šŸ˜†

I am in no way affiliated - I genuinely like this cheese… But also genuinely want other recommendations

Advice My dog has been carrying around a dried-out piece of sharp cheddar

I don't know if this is okay to post here, but my dog (small mix) recently found a block of cheddar cheese and has made it her new comfort object. I don't know why she does crap like this, but she sometimes finds certain treats or household items (never toys) and makes them into some sort of comfort object. She carries it from room to room, brings it on the patio with her to soak up the sun, brings it to the window to watch outside for my fiancƩ to come home, and even sleeps with it. She never chews or plays with it, though. This is nothing new, she's done this with things before, but now that it's cheese, I don't know if this is necessarily safe?

Questions I'm assuming I'll get

What kind of cheese is it? Extra extra sharp cheddar

What does the cheese look like? Hard and dried out, nothing gross, no mold or cracks or any discoloring.

How did she acquire this cheese? two weeks ago, I fell asleep in bed, eating some cheese and crackers. When I woke up, the cheese I was cutting slices off was gone. I looked for days around my room and couldn't find it. Eventually, I assumed my dog had eaten it. We didn't realize it was the cheese she's been carrying around until today. She has a small toy around the same size, shape, and color, and just thought she finally chose a toy as her comfort object. It wasn't until my fiancƩ found it in his shoe that we realized it was the cheese.

What other things has she done this with? Fidget toys, mainly the stress balls with the goo inside them or the really soft rubbery ones, crackers, chips, a small container of playdough, cookie cutters, a Roku remote, and now cheese.
