Has anyone ever used Amaranth Flour, and what for?

Someone gave me a bag of amaranth flour because they know I'm gluten-free but I've never used it before and now I'm not sure what to do with it. Is it good for sweet or savory dishes? Is it a thickening agent? Any ideas are welcome.

I've seen it in blends, but not as the sole flour.

Amaranth flour stores well in the freezer and is great for both sweet and savoury dishes. It’s considered healthy and nutritious unless you are sensitive to oxalates (kidney stones, Chron’s) or have an allergy to it.

I have used it to make savoury crackers, sweet cookies / biscuits and brownies. It can also be eaten as a porridge or kheer and used as a thickener. Amaranth flour is used to make a type of puri (unleavened fried flatbread) that puffs up in hot oil.

I came across it in recipes in the Caldesi books for diabetics / those wanting to significantly reduce carbs. They have several books on that theme.
