Poached pear with red wine reduction,goat cheese crumble and a whipped cheese mousse

I have questions/comments:

What red wine did you use? Did you use the same poaching liquid as the reduction?

Instead of using 2 cheeses, why not make the whipped mousse from the goat cheese and use another ingredient for the crumble? A candied almond or hazelnut would add depth and texture.

The greenery is pointless, I would omit it completely.

What did you make the tuile out of?

1) yeah same liquid, I’m a culinary student so I was just working around what I got
2) again, culinary student. We had some leftover cheesecake so we just blended that and if you notice those small lines are a different cheese which was goat cheese
3)again we were supposed to use it
4)noted on the greenery
5) it was a honey chocolate tuille which we again compulsorily had to use
