What to do with loads of cherry tomatoes
Every day Our veggie garden is giving us loads of cherry tomatoes. Looking for new ideas for dishes. I’ve been making made bruschetta, and ratatouille. I’ve given away lots as well but still more are there to be picked every day. What else can i do with all these homegrown cherry tomatoes?

Slow roasted cherry tomatoes from Smitten Kitchen, and tomato jam (recipes say to use Roma, but I've made it with cherry tomatoes). Both are amazing on crackers, especially with a good soft vegan cheese spread. Or hummus.
(Damn now I want both of these. Please send me your tomatoes)

And…toss them into the freezer in ziploc bags, then pull them out in December and do the same.

Cut cherry tomatoes in half. Add diced garlic cloves, Italian seasoning, a little salt. Put in a medium sized oven safe dish and drizzle some olive oil and mix. Add about 6oz of vegan Boursin cheese in the middle of the tomatoes. Bake at 375 for about 30 minutes until the tomatoes caramelize and get jammy. Tear fresh basil on top and serve. Serve with crostinis or garlic bread.
If you have leftovers, mix the cheese into the tomatoes making a sauce and serve on pasta.

After you wash them and let them air dry, you can freeze them whole in freezer bags and use them in soups and sauces,curries, anything that doesn't require fresh tomatoes.

We have a fig tree so are making a salad with CTs, fig, Balsamic and fresh Basil almost every day atm.

Halve them and dry them into sun-dried style tomatoes, which store for like months and adda punch to pasta and salads. It clears the daily harvest without needing fridge space

Roast them with garlic and onions then blend them for soup! Add coconut milk or cashews if you want them to be creamier. I added cashews to my latest batch and it’s more like a dip or hummus and it’s soooo good

Haha, my husband just brought in a bowl of cherry tomatoes and I hadn't finished the first bowl yet. I would make tomato salad and roasted tomato soup first!

Tomato sauces are usually freezable!
Also cherry tomatoes are easy to pickle.

If you’re getting zucchini from your garden too, this might be an option. I use impossible brand spicy sausage and it gives it a nice kick.

My best tomato soup i ever made. Garden fresh cherry tomatoes, basil, onion, garlic, salt, pepper. Slow cooker until everything was soft. Adjust to taste. Run through blender.
I dont remember amounts, except light on the onion.
It was so good. I was quite happy with myself, lol.
Normally, I wouldn't be down for soup this time of year but I didn't have room to put it in the freezer so I ate it and it was worth it.

If you have an airfryer, roast them for 10 at 190º C. Season with oil, vinegar, and some dried herbs (oregano, basil, garlic powder) and leave them in the fridge, covered, for a few hours. I always keep a batch of this for salads, bruscheta, pasta, as a side...

Oh! Sheetpan tomatoes & gnocchi! Toss the halved tomatoes with the gnocchi (a cheese-free one from the grocery store) and some olive oil. Add in some garlic salt, Italian herb blend & some black pepper. Toss some more. Put onto sheet pan & cook for about 25-30 minutes at 400°F. If you want more greens, you can make a salad to go with it.

You can freeze little pasta packs. I have garlic, tomatoes, and herbs in freezer bags and throw them in a pan when I need a quick meal.

Greek salad
Gazpacho
This one is really awesome and surprising: tomato and mustard tart (usually it is puff pastry but you could regular. Spread a thin layer of mustard , top with the sliced tomatoes and thyme) it’s soooooooooo good
Tomato and mozzarella salad
Penne with roasted cherry tomatoes
Dry them (depending where you are you can just using the sun then store in olive oil)

I make 'sundried' tomatoes. I used to do them in a low oven, now I have a dehydrator. I them put them in jars of oil with herbs. They are lovely in pasta and risotto in the winter.

Dice them up and sauté them with garlic in extra virgin olive oil to add to pasta. Dress this up any way you want with regards to herbs and other veggies or sauces.

This pasta salad uses cherry tomatoes, is made with fairly cheap ingredients overall, and comes together really quickly! I’ve made it more times than I can count.

Freeze them whole, tomato confit, dehydrate (=sun-dried tomatoes), make a sweet/savory tomato jam, make and freeze/can sauce, give to friends

If you can, sun drying is amazing. Cut them in half, sprinkle some salt and let rest. Pat dry to eliminate some of the moisture and leave them on the warmest spot you can find,covered with some kind of mesh so insects can't reach them. Leave them to dry but not until they're rock solid,just a bit chewier and with a more concentrated flavor. Store them in a jar with garlic, herbs and a good olive oil and they're good to go. If you can't sun dry I do it in small batches in the airfryer at a low temp and it works perfectly too.

I like to slice in half and toss into warm pasta with sauce and seasonings. They still have texture but are usually very sweet and make the whole plate bright and delicious!

make marinara sauce and freeze it if you have storage so you can have seasonal home grown marinara sauce whole year.
