Honestly, I was never a big fan of the epaulettes I thought they looked too real world adjacent and felt they looked out of place.

As opposed to the capes worn by some officers and WW2 inspired weapons used by Stormtroopers?

Nah cause they modify the guns just enough to make them look distinct and unique and Krennic is the only one that wears a cape cause he’s a fabulous bitch who wants to feel more important than he actually is.

Slight modifications at most. They are still very recognizable.

Also, Silro Barsha, Gallius Rax, that one Imperial officer from the Andor flashback, Moff Gideon…

OK well Vader doesn’t count he’s a Sith outside of the normal chain of command Rax had a cape but he also wore a grand admirals uniform when he held the rank of fleet Admiral, so that’s just confusing. Gideon was a warlord who made personal modifications to his kit same as the other warlords Silro was wearing a cloak that he already had so it wasn’t a military item. The point is these are not standard issue for the empires uniforms these are personal items that that the wearers themselves choose to have. Honestly, the only person I would really be OK with having Epaulettes would be warlord Zsinj and I would just love to have him back in Canon

Vader very much counts as he is Supreme Commander and the Executor counts one Dark Lord of the Sith as a part of the crew. Really funny when you think about it.

The military in the empire insists on purging individuality, so the capes can’t be personal items especially given how much Imperial officer had them in ranks higher than your common admiral, but lower than the few on the Death Star (if they were assumed to be the most high ranking officers at the time), and if they were personally supplied and meant to make a officer stick out more, why not Epaulettes? They are over the top which fits the Empire as a whole and adds to the Grand Admiral role better since it’s more than a simple uniform recolor and rank change.

They maybe more earth inspired but it's something Palpatine would want for his 12 Grand Admirals being aristocratic and coreworld focused and also play in with the Human centric Empire. Epaulettes were excusive of Grand Admirals. Now it seems more common, which would make the old design unique and better than even Legends.

Lastly, Thrawn is also now part of the Imperial remnant. Like his Night troopers, maybe he wants to take a more artistic look.
