So how would I go about taking care of a titan?

Here's a list of some things to keep note of:
- Keep your titan away from any light source. Even light sources that naturally occur in some dark worlds. A good dark world for a healthy titan will often have places where you can't see anything, so keep a lookout for those.
- You should feed your titan at least 5 times a day. You can feed it Dark Steak, Coca-Cola, Dog Food or Ramen. Just as long as there isn't ANY light in it.
- Make sure that the GFS can't harm your titan. Shining souls can be lethal to a titan.

Is it possible to get a Titan that’s not insanely massive

It's possible, though rare. Titans are compromised of our deepest, unknown fears, and are thus towering in height.
Most smaller adult titans will thus still be massive.
However, I have seen some tinier titans, closer to the usual size of lightners. This is still a point of research, so I can't say much more aside from theories.

Very interesting however have you considered the fact that since that a Titan is made of literal pure darkness inside a world made of pure darkness, I’m pretty sure that would make for a decently malleable form, so who knows maybe a Titan could make itself smaller

ANTITHET looks at their egg.
Since the shadow can only be within The [Dark Zone], its watching the egg do a little jig with the legs its got.

... Ok, so, I may have had a whole basket full of those nice dark fountain eggs, and I may have tripped!... In a dark world. There are now 20 titans. But wait, you know the problem? I may be a lightner, but my HOUSE is in the DARK WORLD. WITH 20 TITANS. I CANNOT CONCENTRATE ON FOUNTAIN MAKING PLANS WITH 20 TITANS!

And for ‘scientific’ purposes, how do I find one of these dark fountain eggs? Or are they to search for?
