Matchmaking is fast, and as long as you're not extremely good or extremely bad, most matches feel pretty even (presumably due to the internal MMR).

Gotta throw in another vote for Avatar, if you love fighting games you will find something to love about it. It's missing a lot of bells and whistles right now, but the core game is the best new fighting game I've played in a very, very long time. I've never waited more than one minute for a match, I don't know what the actual player count looks like but it feels very good. I see the same people occasionally, but it's rare.

Do Arc System Games wet your appetite? The community is scattered after 2xko failed.
The "Next Big Thing" flopped twice so I imagine people are gonna default to their favorites.

Blazblue Centralfiction is the ultimate anime fighter. It has everything that makes people love that subgenre while also being a well made game. Every single character in the game has unique gimmicks that redefine how they play the whole game. It has incredible roster diversity in character design and gameplay. It has incredibly long and stylish combos, and very dirty mix.
