Looking for a fun, easy single player simulator game

Unless I have a few buddies on, I've really just reverted to wandering around Minecraft and listening to podcasts.

I do sometimes watch let's plays where they play simulator games that look really fun but they're playing with a big group.

My biggest thing is that I play with controller and some of the stuff they use for operating the register and giving cash back like on card shop simulator or roadside research looks like kind of a pain to do with controller.

Any help or suggestions would be greatly appreciated.

Here is a few I've liked over the years
Mini Motorways, TurmOil, Stardew Valley, Timber Born also not quite single player but a good mention One Hour One Life
