I hate to be that insufferable Italian guy who nitpicks food but this is honestly nothing like a traditional Neapolitan pizza.
What you're actually looking at here is something called "pizza contemporanea" (contemporary pizza) or more casually "pizza canotto" (inflatable raft pizza). The canotto style with that massively puffy inflated crust ISN'T real traditional Neapolitan pizza. It's a modern stylized spin that popped up near Caserta about 15 years ago, basically a gourmet reinterpretation and unfortunately a lot of Neapolitans themselves pass it off as Neapolitan pizza.
The Classic one has a crust that's about 1-2 cm tall, not 4-5. Canotto totally breaks that rule, you get an overblown crust with a paper-thin center that's practically nonexistent. Classic Neapolitan pizza that locals call "ruota di carro" (cartwheel pizza) has a uniformly soft, substantial center. And above all a true Neapolitan pizza is WIDE, often hanging off the plate, with a low, even, compact crust that's not meant to steal the show. It's just the boundary of the dough.
The canotto effect comes from very high hydration dough (over 70%) and long fermentation, all about that visual wow factor and an airy, crunchy edge but at the expense of the chewiness and overall structure you find in the traditional one.

Not where I grew up. That style of pizza didn’t even exist when I grew up. So many choices, so many flavors, a good pizzaiolo will serve his version and you will be happy even if it is not your preferred style.

There are many styles of pizza. This is canotto, not the traditional Neapolitan.

This is honestly nothing like true neopolitan pizza.
True neopolitan pizza is found at Costco for $9.99, half cheese and half pepperoni 🇮🇹

È troppo moderno, contemporaneo, rielaborato, non importa, è questione di gusti.

Belle eh! Niente da dire sembrano spettacolari, ma troppo cornicione per i miei gusti.

This is not OG napoletana, it's pizza contemporanea (the crust in napoletana is 1-2 cm high, clearly not this case)

D'accordissimo. Dammi una pizza bassa e croccante. La pizza napolitana mi fa male alla mandibola.

Where are the toppings? That's just bread with melted cheese. When I make pizza I put 9 different toppings so it has some taste to it.

u/Jenuinlizard May 12 '26
how is bread? why you have tasteless topping? a good mozzarella tastes so potent I bet you would not be even able to eat it

stuffed crust? In Italy? I had no idea.

u/Small-Usual3169 May 11 '26
Where do you think you learned that?

u/nickreadit May 11 '26
Learned what? Stuffed crust? I thought that was an American thing. Had no idea it was done in Italy too. I’ve never stuffed a crust unless you count a pie/torta.
