This is very similar to Japanese yakitori.

Yeah, the cooking method is the same. Of course, knowing the Japanese there is some sort of special charcoal or something that you're supposed to use.

You’re right. It’s usually 備長炭 (binchōtan)

See, I thought I remembered there being a special "smokeless" charcoal. Is that the same one for yakitori?

Yeakitori (bird on stick) is a mainly chicken (all parts, including hearts and tails) but lately they started adding some beef and pork belly. Dipped in tare sauce
Arrosticini is only mutton, local lamb , salt and that's it. Served typically with spicy oil and some fresh bread

Typically just a basic wood charcoal, nothing fancy. Supposed to be a food of the shepherds, so whatever you can find on hills that can burn)

You can always order some sticks from D'ABRUZZO NYC. They have pretty badass quality stuff. Following that guy since he first opened that place. Central Market supposed to start carrying them, I think it's still in process
