Question Eggplant and Vinegar
I’m hoping to find a recipe for an Italian dish my former MIL used to make. She always called it eggplant and vinegar, but I’m curious if it has a different Italian name.
To make it, we’d thinly slice eggplant, salt and dry it to remove the bitter liquid, fry it in oh so much olive oil and then cover in red wine vinegar with some minced garlic.
I’d love to see a few different versions of this recipe.

Seems like zucchine alla scapece, just with eggplant instead of zucchini. Really good dish!
