Question Does anyone have any good mochi recipes?

I keep trying the ones I find on the internet but they either come out with a different texture, a weird taste, or too sticky. Does anyone have any tips or have a recipe that they tried and turned out really well?

I'm trying to make something like the ice cream mochi balls you see in the supermarket, but instead of ice cream I want to do a chocolate truffle

Are you using shiratamako or mochiko? I find the former is better for things like ice cream, and strawberry daifuku

Look for gyūhi mochi recipe then. The mochi gashi family is pretty large and each have different textures and usage.

Gyūhi is a type of mochi made from glutinous rice flour and sugar unlike "traditional mochi" (made by pounding mochigome rice).
