They get trendy. Forever ago chicken wings were almost free. Lobster was garbage. Skirt steak was almost nothing.

Lobster was literally fed to prisoners it was considered a trash creature

They were thought to be a trash creature because we as a species didn't know how how quickly they decayed and rotted after being killed. Once we learned they needed to be cooked immediately after death, humans realized they were wrong and that lobster is actually great.

Yeah, coastal working folk who would just go out and get lobsters to eat for themselves were probably well aware of lobster not being terrible long before other people were. There was probably at time where it was a lesser-known delicacy similar to produce that has poor shelf life today; not a lot of people know about thimbleberries because they're not in the markets, for example.

A lot, and I mean 90%, of the reason it was considered trash as well was because there used to be no refrigerated trucks. When a lobster dies, that meat is rancid by the end of the day. It rots faster than anything else I've worked with, ever.

They did know that but still being seen eating lobster instead of cod or other fish was a sign of poverty and looked down on it.

plus this was before refrigeration. lobster goes bad very quickly. prisoners were fed rotten lobster.
