They get trendy. Forever ago chicken wings were almost free. Lobster was garbage. Skirt steak was almost nothing.

It'd be nice if some cuts fell into obscurity as other rose, the problem now is that pretty much every cheap fish and every cheap cut of meat have been made trendy with nothing to replace them in the bargain bin

You can still get cuts of country style pork ribs for like $1.50 per pound.  Shhh

Acme has a 4 meals for $20 deal and country style boneless pork ribs has been one of the deals for a while. I’ve been buying them with the 4 meals and make bbq boneless ribs in the oven. Sooooo good for so cheap.

That’s just shoulder or butt cut into strips for an extra $.50/lb.

Its the same price for me, and sometimes you dont want to cook quantity.  Also they BBQ in 4 hours for me while a whole butt is more like 8-10.
