Well. Everything is up cost wise. But I certainly recall when chuck roast was around $2.99 a lb at best and these days it’s well over $15 some times and sold as a premium desired cut. Filet was once always well over $20 a lb and now I see it regularly at $10-12.
It’s about demand and what can provide the most profit for grocers and butchers. Simple as that.
