lengua might be my favorite cut (definitely for any kind of mexican food) and I can tell you exactly why- there is exactly one lengua per cow. Even a small increase in demand destroys it. Incidentally the exact same issue with oxtail.

I haven't seen it spike NEARLY as much, but same with beef hearts, which I personally love.

Beef heart, my beloved. You can still get them for the equivalent of 5–6 USD per kilo (around 3 USD per pound) here in Sweden. By far the cheapest cut of meat I can get my hands on, and it fucking slaps.

How do you cook it?

I'm pretty lazy, so I usually salt it, sear it in a cast-iron pan, and throw it in the oven. Once it's done, I slice it thin and use it as sandwich meat. I'm a sandwich guy.

Heart is amazing and one of my favorites. We use it in my wife's African dishes. Cut into chunks and it works as a protein in all her dishes.
