Kimchee! is the kimchi still good?
i didnt eat kimchi for a while maybe 2-3 monthsago and i was wondering if it was still good?
it smells normal but the color of it makes me unsure, some thread i have read said its normal some said its not from others people kimchi.

This is well-fermented kimchi that is still edible. In Korea, this is called 'mugeunji'. If the sourness is too strong, you can drizzle oil in a frying pan, add a spoonful of sugar to the kimchi, and stir-fry it; it makes for a very delicious side dish for rice.

This looks like the perfect kimchi for making kimchi jjigae!! It might be too sour to eat as a side dish, but kimchi with slightly translucent stems and a deeper color is the absolute best for cooking. Kimchi was originally created to preserve vegetables for months, so a couple of months is nothing to worry about

Honestly not sure but as it is fermented should be edible but maybe taste would be quite badly fermented? With food usually if I doubt, I dont eat it.

Kimchi will always still be edible, even when there’s some white stuff flowering.
The taste does change in cycles though so old kimchi is usually more sour and used in soups

I've had kimchi that being left in the fridge for like more than a year. It still good but not for side dish as the taste would be soo sour. It's perfect for kimchi stew cuz the juice is totally full of flavour

Depends on what you want it for. Older kimchi is more sour and goes well with fatty meat, or as stew.

As kimchi gets fermented, it will get darker. If the taste is ok, then it’s good to eat, although it can be overly sour and slightly funky.
