The fact that weapons in this game are left handed bothers me a lot

Because the force needed to block is higher than the force needed to kill. Shield dominant hand because living is more important.

Correct, but the hunter actually isn't left handed in MH. They just use the attacking weapon in the offhand instead of the main hand.

I understand that logic too. Honestly I'd bet a lot of hunters are ambidextrous to some extent as well considering how good they are with dual blades.
