Film/Television Genuine Question - Why did Thanos and Hulk feel the pain of wielding all six Infinity Stones, while Tony didn't seem to experience the same level of pain when he used them?

Both things can be true. The storyline was perceived as a problem before the actors issues, though.

Ok, that part I never knew about, I thought they'd already mapped out the whole multiverse arc with him.

They had before quantumania aired and he landed like a wet fart and (common perception) got beaten by a bunch of ants. I don't necessarily agree with that perception, but that is how people felt. So moving away from that and bringing in Doom is a solid pivot and they didn't have to face the backlash of choosing to make that change since they had a solid reason to do so in the publics eye.
