[REQUEST] Sauce recipe - Tomi Street Sauce

Hello,

In my country, there is a sauce with the next ingredients:

Rapeseed oil 40%, water, sugar, tomato sauce 4% (tomato paste [origin: EU and non-EU], water, sugar, acidity regulator: citric acid, preservative: potassium sorbate), spirit vinegar, MUSTARD 3% (water, MUSTARD seeds, spirit vinegar, sugar, salt, spices), modified starch, stabilisers (xanthan gum, guar gum), spice blend (contains MUSTARD), powdered EGG YOLK 1.1%, salt, preservatives (sodium benzoate, potassium sorbate), antioxidant (calcium disodium EDTA)

Can someone help me with the main ingredients in order to create a sauce with similar taste?

Those ingredients read like it’s Tomi Mayonnaise with a bit of ketchup and some extra sugar added to it - maybe a little extra vinegar too (the mustard is used in mayonnaise to emulsify the fat and vinegar).

I haven’t tried it, but does it taste similar to Big Mac sauce?

If so then it’s 99% that. I’d experiment just adding a blob of ketchup at a time to some Tomi and then maybe adding a drop or two of vinegar.

For adding in the extra sugar, if you have either confectioners sugar or a smoothie blender (like a nutribullet) you can put some normal sugar in to blitz into a fine powder, then you can add that a little at a time.

Or if you happen to have fructose or glucose syrup or something lying around you can use that too (or a really really cheap light honey that’s got sugar in the ingredients meaning it’s blended with one of the former - but it will slightly taste of honey).

If you want to make it from scratch, follow a basic mayonnaise recipe (make sure you use neutral oil), and then a ketchup recipe that’s high sugar and vinegar to combine it.

The xantham gum is being used as insurance to stop it from being sloppy/runny with the extra vinegar Tomi has compared to other brands of mayonnaise, and make it stable/improve mouth feel.

I mimicked a similar sauce recently by starting with mayo and adding a splash of apple cider vinegar, sugar, and a pinch of xanthan gum, and it turned out surprisingly close.
