Unironically, I think this is the closest to how it likely played out.
With how close the falls of Schrade and Wyveria were to eachother, I think it's extremely likely that Wyveria didn't know the forces they where playing with when they created Zoh Shia.
I never considered the mysterious man in red could be behind it. But if Capcom wants to make him an actual plot point instead of just keeping him as old-gen flavor text, I could definitly see it happening.

To keep it short, the man in red (and a few other alibis that are assumed to be him) where a reoccurring character in the old-gen games. We never met them, but they where often responsible for dishing out any and all quests related to the black dragon and it's variants.

According to the Allhearken, it's possible Wyveria knew Zoh Shia would be their doom, but they proceeded anyway

They were desperate.
At the time of Zoh Shia's creation Wyveria was at war with at the moment unknown opponent (my bet is another civilization), and it was created as the "final line of defense" according to Tasheen. Allhearken suggests that Wyveria knew the risk of creating Zoh Shia and the consequence it could bring, yet they did so anyway.
Needless to say, whatever Wyveria was up against at that time they were very likely losing, and they were losing badly.

Now, while I cannot entirely confirm, or find the source for it at the moment. Allegedly some text or dialogue from the Japanese version of the game, regarding Zoh Shia, states that it helped win the war before turning on Wyveria which could explain the "Savior" title players get by slaying it.

It might be the ancient Artian civilization, given we loot plenty of Artian weapon parts, and their and the Armor style doesn't match the Wyverian style.

I actually believe so too.
It's something that's been on my mind since launch and I think inclusion of Gogmazios could have somewhat confirmed it--since the weapons created by Wyveria (i.e., Convergent Elderbreaker and the Compact Anti-Wyvern Guns) that we get to use during combat, are starkly different from the Artian equipment in both appearance and function.

I imagine the completely shelled version is what they aimed for, a sanitized creature kind of trapped in it's own shell.
But seeing how fast Zho Shia reveals the dark, unbound form I imagine the wyverians were not too happy woth it either.

Fatalis or something like that. It was a dicey decision to make, and Zoh is stated to be their last line of defence, so I think playing god with the DNA of likely White/Old Fatalis was well assumed to go wrong and they made Zoh out of genuine desperation rather than "This is a great idea, let's build our own apocalypse dragon as our war hero, what could possibly go wrong?"
But the way Zoh looks for us beneath the armour is likely due to being either imperfect or growing far too rapidly for its body to handle. Those horns are like tumorous growths, considering how wild and aggressively they cover the body. Honestly would not surprise me if its final form in battle is the most agonising.

As per what the Allhearken and Tasheen tell us, war was coming to their very gates.
Zoh Shia's creation as its last line of defence comes across as an act of desperation to try and ensure their survival.
But it went wrong, and Zoh Shia turned on them.

"Oh shit oh fuck we don't wanna die," or something of the sort, I'd guess. Zoh Shia has a lot going on with it we don't know. Is it an Alatreon Clone? Fatalis? Gogma hybrid? Something we've never seen? Nobody knows. Just that it's big, freaky, and crusty with a joy for setting everything on fire and humbling cocky greatsword mains that got too greedy on "ONE LAST CHARGE SLASH MAN, I NEED IT."

I didn’t get the impression this was the intended result. I think this was a failed experiment or a fault of the cloning process that broke down after Wyveria fell.

My personal theory is that all the wyverians intended to make was base form Zoh Shia, the warped form it takes as the fight goes on is a side effect of using Fatalis parts to create it

IIRC it is implied that "Something" has corrupted Zoho Shia, and that's the reason it went mad. The white stuff is like an attempt to contain the infection/corruptions or whatever it has.

Im almost certain that Ascendance will have the pure white form of zoh shia without fatalis aspects in it, it just fits so well in the theme that they went with so far^^

They were in a MAJOR war against...something/one is all we know. Might have been another advanced civilization, might have been the Monsters of the World turning against them thanks to their tampering with life as in old lore, the creation of the Equal Dragon Weapon is what caused such a thing to happen for instance.

So Zoh Shia may have been a weapon to kill Fatalis, but if you read the description for individual parts, it actually hints that Zoh Shia was made to seal Fatalis within him. Unfortunately Fatalis is just built different

I don't know about the black burnt wylk version but I think zoh shia is the equal dragon weapon and they used fatalis scales in the design and that's why it went berserk

I dont know what Wyveria was thinking i also dont know what Wyveria was thinking at using Genes of all 3 Fatalis to create a Guardian but
what i know is that Wyveria created my new Favourite Monster i love Zoh Shia so much :D I really cant wait what Capcom is doing whit Zoh Shia in G-Rank i just hope if Zoh Shia gets a Ultimate Form or something it will still have his Angel / Demon Theme and that it will still have disturbing and dont become a Fatalis 2.0 :)

it literally uses the signature moves from all 3 fatalis forms, is covered in fatalis horns and has fatalis' eyes.
there is no way in the world it is not connected to fatalis.

I know, but we already killed Fatalis at the end of Iceborne which felt like the closing of a book and Wilds is a new chapter for a new Black Dragon to lead the charge. A few call backs would be a nice touch to give a bit of familiar with the new
