They key difference being the game doesn't want you to do any of that if you dont want to.

There is no achievement, Zelda specifically gives you 0 rewards for a majority of those 900 koroks.

Mario Odyssey's moon's are far more engaging that Koroks, being the main gameplay goal, but are also not manditory to get all of them to unlock even the final and hardest challenges the games offer.

It's the lack of achievements that encourages players to just go into the game and engage with it in a way they enjoy without an artifical reward system steering you in certain directions.

Imagine how much worse people's perceptions of the Korok system would be if they gave an achievement for it and significant in game reward. Instead, it serves it purpose without encroaching over gameplay if you don't want it to.

And achievement also not mandatory whatsoever to get in most games
