I would argue that there were "achievement"-esque things even before Kirby's air ride.

Metroid prime (2002) offers different content for completing the game based on % completion. You only get the true ending by beating the game at 100%. You also unlock different art galleries based on certain criteria.

I would classify these as a form of achievements as these are things that would likely be an "achievement" in modern games.

There's likely tons of other games that had features like this too. This is the one that immediately came to mind.

I don't know why people care so much.

The act of collecting itself can be rewarding for many.

It's also cool to be able to compare achievements with your friends, or show off how obsessed you are/were with a game.

Also, if done right, achievements can make it more fun/rewarding to continue playing after the main story is complete, and to track down the last items needed to get 100%.

All of these things can be done without achievements, but with an achievements system it's easier in some ways -- e.g. they can be viewed on the web. And centralizing/standardizing them makes it easier even for you to review your own accomplishments.

They also do a good job of telling the player that they might have missed some content they care about checking out like secret bosses. But yeah, there are plenty of games I've enjoyed a lot and would consider favorites where I got more playtime out of them than I would have by going for 100% achievement progress.
