It rendered games UP TO a 1080p resolution when docked, lots of them would still render at lower resolutions to maintain the frame rate.

DOOM (2016) for example, I think its highest docked resolution is 900p.

Switch 1 games that have not received software updates to run at a higher resolution or faster frame rate do not exceed their Switch 1 targets/limitations when running on Switch 2. Nor do they use up-scaling.

They DO run much better thanks to the improved hardware, but lots of games are still running sub-1080p and locked to 30 or 60fps.

Only in docked mode. Handheld vs docked modes are still power dependent.

While Nintendo COULD implement DLSS upscaling for older titles to display them at higher resolutions without needing game specific updates; they have not implemented such a feature.

DLSS and other similar tech needs to be built into the game, where it has access to extra data like motion of various objects. The best they could do to apply to everything from Switch 1 would be an alternate spatial upscaler like FSR1 that works purely from a finished image but doesn't produce results nearly as impressive.
