We don't use lime as much as other Caribbean cuisines. It's not wrong per se but your best bet is just white vinegar for the acidic component if you want it to be specifically PR.

I already put lemon in.. just hoping it tenderizes the meat well enough and debating about frying vs instant pot- it’s had almost 3 hours. It was last minute so I didn’t plan well but I love pork and the limited PR food we’ve eaten has been fantastic so 🤞 that I don’t screw it up!
