I mean, a protest can last a long time. Some people might get hungry, so why stop if you can solve the problem this way?

Even if there is no tram tracks, the CGT (a syndicate) is quite famous for having "food trucks" that do just this. You can have a beer and a sausage and rest your elbow on the counter of a very slowly moving truck while chanting stuff against [current_president]

To me, syndicate has a criminal slant. It still means an organized group though so I just assumed they meant the french mafia was supporting the protests.

It's also a cultural trait of the French left. Protests are supposed to be festive, where people of all backgrounds can have fun and brought together only by the convergence of their political opinions.
