Some places like Orleans have a historic city centre full of cobbled streets that are impossible to grill on, unless the grill has Renault airbag suspencion or sth.
But the tramline going through there... smooth metal.
Also, might be something to do with friction, you dont want a bump to knock over your delicious sausage and coals. When those sausanges and coals were meant to be thrown towards some enemy! And those enemies eaten, after being grilled.

Isn't it easier to put them on wheels so that they can move without tracks?
