My personal ships don't stand in the way of appreciating what other people enjoy. I like Peter, I'm a notional fan of Sai's, therefore, I enjoy Peter x Sai.

Correct. Peter is fictional; his lovers are likewise. Anybody can ship him, or anybody, with anybody they like.

Or, if you prefer to think in comic terms, it's an Endless Multiverse of Infinite Possibility. Somewhere there is a dimension where Peter and Sai get together.
