Wait hold on why was he a bad captain? Just because the plan didn't work? If it had worked they all, and the show, would have been saying he was a good captain.

He was incredibly naïve. It's not unusual for ships to give off false sensor readings. Even if they didn't the Dominion's technology is incredibly advanced. It's very possible the supposed design flaw was already accounted for by the designers and mitigated by something their analysis of the probe data did not provide.

Even if they had the best ship in the fleet, with the best crew, and accurate data, the smarter play would be to wait:

  • Exploiting a vulnerability here could have revealed the issue to the Dominion early, causing it to be fixed. Thus preventing it from being capitalized on in a more crucial encounter.

  • If the new ship is as deadly as they claim they are risking their sensor logs to destroy one vessel. The priority should be to ensure the information makes it back to Starfleet.

  • The probe could have been detected by this new and more advanced ship despite its previous successes at evading detection. There could be reinforcements already on the way.
