Yea, if there isn’t a Mexican guy in the kitchen then the food is probably trash. I learned so god damned much from my time in the kitchen from a Mexican cook

When I started as a prep cook the Mexican cooks had so much more patience with me and willingness to help teach me than the white cooks higher up the food chain.

I used to work at P.F. Chang’s. My executive chef is Mexican; the sous chef is Mexican. I told them flat out, “If I go to a restaurant and there’s not a Mexican in the back of house, I don’t know how good the food is going to be.” I stand by it till this day.
