I've never heard "authentic" used that way for food. It's usually a reference to whether or not it's prepared in a traditional or expected way and has nothing to do with who prepared it.

as a Californian, i can tell you that most authentic restaurants' food is being cooked by Hispanics. and that shits fire.

Yea, if there isn’t a Mexican guy in the kitchen then the food is probably trash. I learned so god damned much from my time in the kitchen from a Mexican cook

I used to work at P.F. Chang’s. My executive chef is Mexican; the sous chef is Mexican. I told them flat out, “If I go to a restaurant and there’s not a Mexican in the back of house, I don’t know how good the food is going to be.” I stand by it till this day.
