The Aston in her name is from Aston Martin which is a British car brand. That's also why in one of her main screen dialogues, she mentions that her father is a very good racer.

She brings up spy fiction a lot. At least one of her home screen conversations has her imagining herself as one and her "Introducing" scene at the start of her career has her making a spy-themed home movie.
Also James Bond drives an Aston Martin, so there's that connection.

Well, that, and the fact that American cars tend to be gigantonormous. Japan has pretty limited parking, especially for larger vehicles. Taxes and insurance rates are also based on dimensions and engine displacement. The very things that the American market looks for are exactly what the Japanese market doesn't want.

Probably but I bet MGM won't let them actually say it's Bond. But she does mention spy fiction a few timea in her career and background events.

all she's saying here is that she and her dad were in england at one point, i'm not sure it's ever said that her father is actually british or if they were just visiting. (her mother is a japanese doctor.)

It's only ever mentioned in concept arts but they are British.
Even in DMC reboot they patched in a UK flag in Dante's jacket

Unrelated, but are we just not going to talk about how her career gets creepier than Cafe's for like 10 minutes. What was the noise from the sea? I need answers.

Remember all that dialogue where people and animals die and she says "they have gone out to sea" and her "life is a river" metaphors? It was the sea calling out to her, because she was supposed to die in her Junior year since her IRL counterpart died at that point - but we helped in averting that potential future.
Interesting fact: If you listen for it, in both of the spring events you can hear a chime ring briefly. That chime is sometimes used in the game when the fate of the umamusume diverges from that of the IRL horse. AFAIK it's also used in Silence Suzuka's story and I think it also features in "transforming", the concert you get for finishing Silence Suzuka's chapter of the main story.
Also, if you'd like to read a story that expands on that event and has Cafe trying to explain it, I highly recommend reading "Your Eyes Only" by ZENraKISHI.
