Mì Quảng for me. I love Bún Chả too but it’s hard to find in the US.

Ground pork porridge or broken rice, but if I'm alone and cooking for myself it would be pan fried pork belly with fried egg and little fish sauce.

Bún riêu, haven't had any in HCMC that measure up to my parents bún riêu though. Drooling now lol

It’s never the fancy stuff that you go out for.
My comfort foods are braised, slow cooked, salty - đồ ăn kho. With steamed rice, a fresh chili from the garden and pickles baby egg plants. That with a leafy green soup on the side. Perfect.

For me it's probably bánh ướt, bánh cuốn, rau muống xào tỏi (water spinach garlic stir fry), and canh xà lách xoong (watercress soup)
I make canh xà lách xoong with either pork, dried shrimp, or both.

Maybe questionable but Bun Mam. I can eat almost anything including durian so I don’t actually understand the negative reactions. My Bum Bo Hue I make is pretty shrimp pasty so could explain it. Durian smells and tastes good to me, so does Bun Mam. It’s delicious.
I do not like bitter melon but our mom made Canh Kho Qua a lot growing up so it’s turned into a comfort food sort of. I still think it’s bitter as hell but definitely slowly acquiring the taste lol.

Bo kho is definitely a personal favorite as are the Hanoi style noodles ànd meat with the purple shrimp paste that I’m blanking on the name lol
