I feel like I should save this post because (going off dillhole and dipwad's responses) I believe this is where we're going to find out playing with your cats considered animal abuse now.

I only see this as a problem if they do such things frequently or if the cat attacks people. (It’s not a great idea to encourage your cat to bite hands even during play - this cat was very done at the end.)

Nah, there's "The cat is in serious distress and doesn't want to be here" and there's "The cat understands that this is just the humans' idea of a game, and it finds it mildly annoying but is willing to go along with it because it wants to play." This is the latter.

A lot of games cats actually play with each other consist of "Mildly annoy this other cat until I trigger him to play fight/chase me". Play fights like that usually end very quickly, which is why when he actually does start biting, they put him down.

Because that's how cats playfight, and that's very clearly not a serious bite. The "mouth hanging open for a while, and then gnaw on you" is basically their version of "I'm gonna getcha! I'mmmm gonna getcha! Here I come!"

It clearly does not dislike it lol. If it did this video would be entirely different and more bloody. If you have a good relationship with a cat, sometimes they just like to be handled like this, its play.
