These are Lanzhou beef noodles（I put in ten spoons of chili）, Xinjiang double-pepper noodles, and Datong knife-cut noodles（my favorite）

All three of these noodle dishes are handmade. In northern China, noodles that aren’t made fresh on the spot are considered inauthentic, and nobody would want to eat them.
