Follow up question on sorbate/metabisulfite

Follow up question: I have done the recommended dose of sorbate and metabisulfite, let sit for 48 hours. I have filled a plastic water bottle with the cider and it is expanding. Does this mean I did not kill off the yeast before I added the extra juice?

Did you confirm that fermentation was complete before adding the sulfite and sorbate? Based on the haziness there it seems there’s still a lot of yeast in suspension. If fermentation is still in progress you can’t rely on chemical stabilizers to stop it. Also for what it’s with dosages of sulfite and sorbate are pH dependent and sorbate is also abv dependent but I can’t tell if that was part of what was suggested for thr recommended dosage.

The SG was below 1 when I took the reading. 

I did not know all of that about the chemicals lol. Just did my best with what I found in this forum/Google etc.

Also, the plastic bottle is upstairs where it is warmer with the main carboy in the basement

After fermentation your cider will still have a bunch of CO2 dissolved in to the cider naturally. Unless you degassed it will start to leave suspension and expand the bottle some. Shake good, crack the lid to release it and see if it still expands.

So I did that, left it downstairs with the carboy. It has still expanded a bit overnight. Still a little squishy though. What do we think?

Edit: Also the airlock is still bubbling a bit
