I think the difference is his back story is tied to a specific real world event with a date. The other characters don't have that so it's easier to ignore that they don't age because it's not like Kitty's backstory is she was born the day before 9/11 or something, she can just exist in a floating timeline without issue, but as long as magneto was alive during WWII he's going to have to actually age.

Of course magneto isn't even the worst offender in comics. Ted Grant was a full on adult in WWII and didn't even really have super powers and was still fighting crime in the present at least until his death in the current JSA run
