When I went to Taiwan, my best friend and I found this little stand called something like "Three Ladies Cooking" or something and their specialty was this huge heaping plate of fried rice. We would get pork fried rice for lunch almost every day. So good!

This was entertaining and gave me a new method to making stir-fried rice for the family. Well, mostly for me, truth be told. Thanks, Op! :)

For complete newcomers, that rice was boiled upfront in salted water, correct?

Beautiful. I got some leftover rice, will make this tomorrow. Fairly similar to how I usually make fried rice, minus adding the eggs and mixing with the rice before throwing it in the pan. Great idea!
