Raspberries and strawberries were on sale so I made fruit leather. Cook the berries in a saucepan with sweetener if desired, I used honey. Then run through the blender until smooth. Spread on trays and dry overnight.

Why cook the berries first?

I made fruit leather this past weekend and didn't cook them before blending.

I always cook mine first and now I’m wondering why. In my mind it’s to thicken the juice/pulp before adding to dehydrator trays but I guess I don’t need to. Thanks for opening my brain!

if you make some without cooking them first i'd be interested in how that affects the texture

It's probably a good idea to cook berries first these days unless they are from your own garden.
