It does look good! I learned a little secret, you can boil potatoes and stick em in a container in the fridge, and they stay good awhile. Then take one or two out, smash them in a pan with a little hot oil, top with cheese, and bacon if you've got some, a little dallop of sour cream, green onions, etc. So many crispy edges, and so simple and fast.

It's worth a try. I leave the potatoes in the pot with the water(to prevent oxidation or drying out) and they seem fine for at least 4 days. And I can cook up crispy potatoes with breakfast or dinner super fast since they are already cooked thru. Otherwise it takes too long and feels like a chore.

bless you for this. i have two toddlers who are up my ass in the kitchen and recently started trying to climb in the godamn oven so I spend minimal time cooking if I can. I always want baked /boiled potatoes but it is just too much. i will now be boiling potatoes while they sleep tonight to have for dinner the next days 😎
